Grapes: 80%Chardonnay, 20%white pinot

Vineyards of origin: the grapes come from all the vineyards of the company, located in the municipalities of Paderno Franciacorta, Passirano, Camignone, Cazzago S.M., Provaglio D’Iseo and Rodengo Saiano

Land: moraine of glacial origin

Vineyard system: Sylvoz at 3,000 strains/ha and Guyot at 5,000 strains/ha

Average age of the vineyards: 26 years

Reta: not exceeding 95 q.li/ha

Harvest: Manual, only of healthy bunches with perfect maturation collected in small perforated coffers

Vintage of harvest: first half of August, starting with the white pinot, continuing with the black pinot and ending with the Chardonnay.

Vinification: Soft pressing with very low yields (65%) and separation of the musts in three hamlets. Fermentation with selected yeasts at a controlled temperature of 16-18 ° C in concrete tanks

Reserve wines: from 10% to 15%

Tiraggio: in the spring following the harvest

Aging: minimum 24 months on the bottled yeasts and at least 3 months after the blur

Dosage: Brut, with sugar residue never exceeding 5 grams/liter.
