For thousands of years, the moon has been the muse of poems, verses, songs and who knows what else, admiring it is a way of experiencing emotions, desires and dreams. With its variations, its mystical beauty, it acts as a bridge between the earthly and the divine, between reality and illusion, a celestial body lying on a turquoise sea at the foot of Vesuvius.
The grapes are harvested by hand and placed in previously sanitised plastic crates. A maximum of 15 kg of grapes is placed in each crate to prevent the grapes from being naturally crushed during transport. A bag containing dry ice is placed on top of each box to keep the grapes at a temperature that prevents premature and uncontrolled fermentation. Once in the winery, the grapes are processed in a grape crusher, this process allows us to separate the stems from the grapes and to crush them, after this phase the destemmed grapes are placed in steel silos, where fermentation at a controlled temperature of 24/26° lasts for about 8/10 days after fermentation the must is placed in maturation tanks to then be processed and bottled.
