Gomasio is a preparation of oriental origin made with sesame seeds (goma) and salt (shio), widely used in macrobiotic cuisine and in Ayurvedic medicine for its therapeutic properties. Used instead of salt, it reduces the sodium intake in our diets. It is rich in mineral salts, especially calcium, and in proteins, B vitamins, vitamins A, D, E and PP. In addition, it contains essential fatty acids such as Omega 3 and Omega 6, proving to be a valid aid for the well-being of the cardiovascular system. In summer it is an excellent ally against the heat, because it limits thirst and helps stabilize the level of sodium and potassium in the blood.

Gomasio Dolci Evasioni uses only Ispica Sesame. This territory, located in the province of Ragusa, preserves an ancient production of sesame, introduced in Sicily at the time of the Arab domination. The Ispica variety was selected two centuries ago by local farmers and has a small seed, amber color and intense flavor. Ispica sesame has always been known, sought after and appreciated for its high quality. Today the cultivation is reduced to a few hectares cultivated by some producers who still apply an entirely manual cultivation technique in small plots of land. Thanks to these characteristics, Ispica Sesame was recently recognized as a Slow Food Presidium.

Another distinctive note of our Gomasio are the herbs of the Iblei mountains. Among the varieties that we grow in our countryside, we have selected oregano, rosemary, sage and thyme, which give the dressing a unique aroma, with the unmistakable scent of Sicily.

Fragrant, with a strong and at the same time delicate flavor, Gomasio with Dolci Evasioni herbs is perfect for seasoning and giving character to raw and steamed vegetables, cereals, salads, fish and meats. It is ideal for flavoring and decorating sauces, spreads and velvety creams. Excellent on bread and canapés, even without the addition of oil.

L’Arcolaio is a type B social cooperative, which was founded in 2003 to facilitate the work placement of prisoners through the management of a productive activity within the Syracuse prison, which it takes care of and initiates commercial development.

Initially, the cooperative produces organic bread, but encounters many commercial difficulties and the market and customers are not yet ready for this innovative choice, therefore the production of bread is abandoned, favoring the organic, gluten-free and solidarity creation of almond pastes and other typical sweets of the Sicilian tradition.

In 2005 the registered trademark “Dolci Evasioni” was created and a dedicated packaging was developed. Dolci Evasioni products conquer the national market through specialized organic shops, fair trade shops and GAS (solidarity buying groups).

In 2014, with the support of the Val di Noto Community Foundation, of which the Arcolaio is a founding member, the Frutti degli Iblei project was launched: through the recovery of uncultivated land and the involvement of other categories of disadvantaged people (mainly young and immigrant women), new product categories are introduced, such as aromatic herbs, flavored salts and dried vegetables.

All products are made with organic ingredients of the highest quality and are certified by ICEA (Institute for Ethical and Environmental Certification).

Furthermore, Dolci Evasioni produced in prison are entirely gluten free, thanks to a laboratory that excludes the use of raw materials with gluten.

Most of the Arcolaio's desserts are based on the use of Sicilian almonds, an excellence of the territory. Almonds can be tasted natural or peeled, toasted, praline and covered with delicious chocolate, or transformed into fragrant traditional Sicilian sweets, such as almond paste and soft amaretti, and in the precious preparation for almond milk. The almond is also the protagonist of the pesto, made only with basil and extra virgin olive oil, without garlic and without cheese.

In addition to almonds, citrus fruits are also enhanced: "we select the most fragrant lemons and oranges, dry the slices at low temperature to give you a delicious snack and transform the skins into irresistible candied fruit covered in chocolate. The syrup obtained from candying is used as a base for our wholemeal shortbread biscuits of ancient Sicilian wheat ".

Dolci Evasioni products have gained recognition in the national market through organic specialty stores, fair trade shops, and solidarity purchasing groups. Values

From the very beginning, one of the distinctive features of L'Arcolaio's products has been the use of organic raw materials, sourced from collaborative networks of small local farmers and fair trade (such as cane sugar), as a signal of the global dimension of solidarity. An added value is certainly the preference for ingredients from controlled supply chains that safeguard environmental balance and protect workers' rights. Respect for the earth also involves the promotion of natural and cultural diversity in the territory, such as the choice of almonds, an excellent product from the southeastern region of Sicily, as well as citrus fruits, carob, and wild herbs. The experience of social economy represents an evolutionary factor in rebalancing market mechanisms, aimed at raising public awareness of critical and conscious consumption. Their project believes and continues to contribute to the evolution of the penitentiary system towards a true rehabilitative function, thanks to a welcoming spirit in concrete work integration projects.

Only cane sugar is used in the making, providing a delicate and aromatic sweetness. Almonds also take center stage in the pesto, made only with basil and extra virgin olive oil, without garlic and cheese. In addition to almonds, Sicilian citrus fruits are also valued through the selection of the most fragrant lemons and oranges, transforming the peels into irresistible candied treats covered in chocolate. Carob fruits, typical of the southeastern region of Sicily, are used to make exquisite artisanal syrup following ancient recipes. Finally, on the rocky and sunny terrains of the Iblei Mountains, aromatic herbs are meticulously gathered, mixed with sea salt from the Trapani Nature Reserve managed by WWF, and sealed in glass jars ready to release intense and precious flavors and aromas.
