Vinification: Mashing within 3 hours of harvesting the grapes, separate pressing of the three vines with limited yields (50%) and use of the free-run must only. Maceration of Pinot Noir for 24-30 hours to extract the color. Fermentation with selected yeasts at a controlled temperature of 16-18 ° C, 50% in concrete tanks and 50% in oak barrels of several steps
