DEMETRA ROSÉ MILLESIMATO FRANCIACORTA BRUT NATURE DOCG

Grapes: Pinot Nero 50%, Chardonnay 35% and Pinot Bianco 15%

Vineyards of provenance: The grapes come exclusively from the Mirabella vineyard, located in Paderno Franciacorta

Soil: Fluvio-glacial

Vineyard system: Sylvoz at 3,000 vines / ha

Average age of the vines: 41 years

Yield: Not more than 60 quintals / ha

Harvest: Manual, only of perfectly ripe healthy bunches collected in small perforated crates

Harvest period: First half of August, starting with Pinot Bianco, continuing with Pinot Nero and ending with Chardonnay

Vinification: Mashing within 3 hours of harvesting the grapes, separate pressing of the three vines with limited yields (50%) and use of the free-run must only. Maceration of Pinot Noir for 18-24 hours to extract the color. Fermentation with selected yeasts at a controlled temperature of 16-18 ° C, 80% in concrete tanks and 20% in oak barrels of several steps

Reserve wines: Only base wines of the vintage vintage

Tirage: In the spring following the harvest

Aging: Minimum 70 months on the lees in the bottle and at least 6 months after disgorgement
