Grapes: 70% Chardonnay, 20% black pinot and 10% white pinot

Vinification: amount within 3 hours from the collection of grapes, separate pressing of the three vines with limited yields (50%) and use of the flower must only. Fermentation with selected yeasts at a controlled temperature of 16-18 ° C, 80% in cement tanks and 20% in oak barriques of multiple steps
