Demetra Millesimato Franciacorta Brut Nature DOCG

Grapes: 70% Chardonnay, 20% black pinot and 10% white pinot

Vineyards of origin: the grapes come only from the Mirabella vineyard, located in Paderno Franciacorta

Land: fluvio-gliacial

Vineyard system: Sylvoz at 3,000 strains/ha

Average age of the vineyards: 41 years

Reta: not exceeding 60 q.li/ha

Harvest: Manual, only of healthy bunches with perfect maturation collected in small perforated coffers

Harvest era: first half of August, starting with the white pinot, continuing with the black pinot and ending with the Chardonnay

Vinification: amount within 3 hours from the collection of grapes, separate pressing of the three vines with limited yields (50%) and use of the flower must only. Fermentation with selected yeasts at a controlled temperature of 16-18 ° C, 80% in cement tanks and 20% in oak barriques of multiple steps
