Grapes: 45%pinot black, 45%chardonnay, 10%white pinot
Vineyards of origin: the grapes come from the vineyards of the company located in the municipalities of Paderno Franciacorta, Passirano, Camignone and Provaglio d'Iseo
Land: deep moraine and fluvial-gliacial
Vineyard system: Guyot at 5,000 strains/ha
Average age of the vineyards: 28 years
Reta: not exceeding 90 q.li/ha
Harvest: Manual, only of healthy bunches with perfect maturation collected in small perforated coffers
Harvest era: first half of August, starting with the white pinot, continuing with the black pinot and ending with the Chardonnay
Vinification: Soft pressing with very low yields (65%) and separation of the musts in three hamlets. Maceration of 18-24 hours of the black pinot for color extraction. Fermentation with selected yeasts at a controlled temperature of 16-18 ° C in concrete tanks
Reserve wines: from 5% to 10%
Tiraggio: in the spring following the harvest
Aging: minimum 30 months on the bottled yeasts and at least 3 months after the blur
Dosage: Brut, with sugar residue never exceeding 7.5 grams/liter.
