Along the slopes of Vesuvius, streaks of fire shone and glowed against the background of the night's darkness, and from the rows of vines a red light could be seen, it was the moon, a fiery red moon.
The grapes are harvested by hand and placed in previously sanitised plastic crates. A maximum of 15 kg of grapes is placed in each crate to prevent the grapes from being naturally crushed during transport. A bag containing dry ice is placed on top of each box to keep the grapes at a temperature that prevents premature and uncontrolled fermentation. Once in the winery, the grapes are processed in a grape crusher, this process allows us to separate the stems from the grapes and to crush them, after this phase the destemmed grapes are placed in steel silos, where fermentation at a controlled temperature of 24/26° lasts for about 8/10 days after fermentation the must is placed in maturation tanks to then be processed and bottled.
